As one year ends and another begins, we celebrate to mark a new year with our family and friends. Making new year resolutions and goals settings for the year to come.

I, however, like to start the year off with healthy comfort foods. Creating a feast to feed the family with the most favoured meals to festive snacks and desserts is our way of celebrating the year to come.

One of our most favourite comfort food we grew up having is the island’s popular ghee rice & curry meal. Re-creating that same meal brings back fond memories of our childhood life on the island.

The entire meal consists of dips, several sides, curries, ghee rice and an unforgettable sambal made with lime pickles. The condiment brings the most satisfying zing out of a meal.

Have you heard, seen or turned fresh limes into pickles? The island I grew up in has plentiful seafood, exotic fruits, and veggies. So fresh limes often go on sale in bulk. Most of the locals tend to turn them into pickles. Customizing the flavour to meet their taste. We did too at one point.

These days, however, nearly all Asian stores have shelves that are stacked with jars of pre-made lime pickles. A teaspoon is all it takes to change the way a meal tastes. Why not change a dip like that into a condiment to complement the meal. It has a rich salty taste, and the lime has a zesty kick to it. The flavour is definitely addictive. Without this pickle, the meal will not taste the same.

How The Lime Pickle Recipe Is Made

Lime pickles, in general, tastes spectacular, but from time to time, I like to change it up into a sambal, so that it becomes an added side/condiment to a meal instead of serving it out of a jar.

The store-bought lime already comes out seasoned heavily. So combining it with fresh onions, green chilli peppers, chilli flakes, and milk is all it takes, to turn the pickle into a more juicy, creamy but subtle flavoured sumbal.

Lime Pickle Recipe | Easy Sambal Made In Minutes

Turn your lime pickle into a condiment. No-cook recipe with five ingredients and takes five minutes of your time. It's time to add that spicy zing to your everyday meals.

Ingredients

  • 1 medium-size Red onion sliced thin
  • 2 Thai green chili pepper sliced
  • 1 tbsp Lime pickle Mother's recipe brand hot lime pickle
  • 3 tbsp Milk
  • 1 tsp Chilli flakes (option)

Instructions

  1. Slice the onions thin, slice the green chili peppers and have the rest of the ingredients gathered.

  2. Combine all the above ingredients in a bowl, then use your dominant hand to give it a good mix.

  3. Taste test to see whether you like to add more ingredients to adjust the flavours.

  4. NOTE – Add more milk for consistency, more lime pickles for flavour, chili flakes or chili powder for spiciness.

Recipe Notes

Onions – Any onions would work however shallots are the best. The next best thing is to use red onions. However, if neither of them is found, you may go for other types of onions.

Lime pickle – I use Mother’s brand hot lime pickle. However, other branded lime pickles work well too.

Handling food with hands – Getting your hands messy with food is not at all a bad thing, so long as they are thoroughly cleaned beforehand. Handling food with hands brings a personal touch to the food you create. This sensory practice only enhances the health benefit according to the Ayurveda.
