Ultra Crispy Smashed Potatoes | Easy Air-fry Recipe Under 30 Minutes

Introducing the dried herb & garlic-seasoned smashed fingerling potatoes that are air fried to an ultra-crisp texture. Tastes so irresistible, that half of them may not even make it to the dinner table.

It’s so ultra-crispy and flavourful on the outside but the inside is completely soft creamy and so rich with savour.

This savoury dish tastes like crispy fries but looks nothing like it. The seasonings can be adjusted to your cravings. All there is to do is boil, smash, season, and air fry.

How Its Made

This recipe is super easy and full of bursting flavours. To make them, first, you need the right type of potatoes.

The potatoes

I highly recommend the baby potatoes or the fingerling potatoes. If it is difficult to find, replace them with any type of potatoes.

I’ve tried a variety of different types of potatoes over the years. They all work well with the right seasoning and care. The best for this type of recipe is to look for baby potatoes or fingerlings which are great for bite-size food.

There are regular potatoes you can use too, some are too starchy, which makes them fluffy, and some are rich and creamy. Clean it first then boil to cut them into big cubes and carry on with the rest of the process.

I used the fingerling potatoes. As it is already small, it does not need to be cut like using regular potatoes. While they are being boiled, prepare the seasoning mix in the meantime.

The seasonings

My go-to seasonings for smashed potatoes are the herb & garlic flavour. it’s a mix of olive oil, salt, dried parsley, freshly chopped garlic, black pepper powder and chilli powder for spice.

There are other seasonings you can try besides mine. For example, use herbs like dried basil, thyme or explore with spices like cayenne pepper or paprika and onion powder. Play with other spices and herbs to create a flavour you like.

The flavours can be endless.

1/3 of the seasonings you create should be used to flavour the skin of the potatoes after it is boiled. Next, the potatoes need to be smashed.

The best tool is to use the back of a cup or a glass. A large fork or a potato masher works just as fine too.

Be very imperfect when it comes to smashing boiled potatoes. The messier, the more flavorful it will end up but keep it all in one piece.

The ones that are squished thin will turn out extra-crisp, while the thick ones will turn out with a lightly crisped outer layer while it holds a soft and rich flavour inside.

Ultra-crisp texture

To create extra crispiness, let the potatoes sit for about 2 minutes to cool down after smashing. This will help dry the potatoes faster, hardening the edges, keeping them together in one piece.

Next, use the rest of the left-over seasoning you prepped earlier, to brush over the smashed potatoes, in between the cracks and over the exposed skins.

Air fry

Carefully place the smashed potatoes in the basket. It is totally okay to overlap the potatoes but keep in mind not to overcrowd them.

Select the air fry setting. Set the temperature to 375’F and air fry for about 10 minutes.

Check halfway to carefully move around the uncooked potatoes to the top. Increase the timer to 5 more minutes if you prefer extra crispiness.

Remove from the air fry basket when done.

Enjoy while it is still fresh, crisp & warm. Indulge in the bursting flavours and the ultra-crisp texture.

How To Serve these ultra-crispy smashed potatoes

These fingerling potatoes taste the best when it’s still fresh hot and steamy. Truly, the best way to satisfy a craving is to steal one right off the air fryer…

Not recommended of course. The potatoes are extremely hot, and yet, I can’t resist the urge to take a bite. I satisfy my cravings with a sample taste before I start platting.

It’s only fair that I taste it right… as I am the cook.

But when your partner in crime joins you on the sampling too, that’s when these crispy potatoes don’t end up entirely at the dinner table.

They are so irresistible!

The small potatoes are fantastic to have as finger food. It goes well with a dip or hot sauce of your choice.

Easy snack choice for gatherings, parties, and potlucks food. With the potatoes being small it is easier to hold and enjoy as a bite-size snack.

Most of the time I serve these potatoes for dinner paired with a main. Pick from Fish, chicken, steak, lamb chops you name it, the potatoes will present well together.

Ingredients

  • Water
  • 1 tbsp Salt
  • 6 Fingerling Potaoes

Step 2 Ingredients

  • 1 tbsp Olive oil or any other cooking oil of your choice
  • 1 tbsp Dried parsely
  • 1 tbsp Garlic freshly chopped or powder
  • 1 tsp Chili powder Kashmiri brand or one you prefer
  • 1 tsp Black pepper powder
  • 1 tsp Salt

Step 3 Ingredient

  • 1 tsp Sea Salt Optional

Instructions

Step 1

  1. On medium/high heat, boil the potatoes in a pot of water with a tbsp of salt.

  2. Boil for about 20 minutes or until it is soft when forked.

  3. Strain the water and set aside the potatoes for 2 minutes to cool down.

Step 2

  1. In a separate bowl, add the olive oil, dried parsley, garlic, chilli powder, black pepper powder, and salt.

  2. Mix the ingredients together to make herb & garlic seasonings for the potatoes.

Step 3

  1. Use 1/3 of the herb & garlic seasoning to flavour the boiled fingerling potatoes.

  2. Use a large fork, a potato masher, or the back of a glass to gently squish the seasoned fingerling potatoes until it smashes. Make sure to smash just enough to keep it all in one piece. 

  3. Use the rest of the herb & garlic seasoning to brush over the fingerling potatoes again.

  4. Sprinkle sea salt for a touch of extra flavour.

Step 4

  1. Place the herb & garlic seasoned fingerling potatoes in the ninja basket over the grill.

  2. Choose the air fry setting, set to temperature 375'F for only 10 minutes to crip.

  3. Check half way to switch the potatoes around carefully not to break them. Increase the timer to air fry more if potatoes needed more crisp texture.

  4. Remove from the basket when done to serve while its still warm and crispy.
