It looks a lot like bruschetta but made like a pizza. I love them both, I could eat them all day and be a happy girl. When it comes down to flavour, it’s so much better when both combined.

I’d say this is one of a kind dish to be served. It’s crunchy, unique with fresh flavours and comes with a hint of spice. Super easy to make and can be served as a starter dish, appetizer, snack or even as a meal of its own.

I call it the Bruschetta Pizza!

It is a combination of a pizza and a bruschetta mixed along with a secret ingredient to create an incredibly delicious dish.

How It’s Made

This bruschetta pizza is an easy one. You can customize the flavour as to your taste preferences. Easy and can be made in an instant. Let me break down the steps in details so that you can mix and match what you like. This dish consists of 4 steps. The BASE, the SPREAD, followed by the TOPPINGS, then the CHEESE.

The Base

Baguette

For the base, we don’t need to hassle with making pizza dough for this dish. Instead, I used a french baguette. It’s a long thin loaf of bread. I sliced slightly to an angle to get a wider longer surface area to work with. It’s the type of bread you’d go for if making bruschetta. Instead of prepping the bread as we do in bruschetta we wait until the end to bake it like a pizza.

If not the baguette you can go for ciabatta bread as well. If neither can be found just go for any bread as long as it is not too soft.

The Spread

Tomato puree + Mayonnaise = The spread

We use a tomato base for pizza. Garlic/olive oil drizzled for bruschetta. For this recipe, I went with a spread of my own depending on what’s in the kitchen. Pick what works for you or if nothing does make a base of your own to meet your taste preferences.

  • 1 = Mayonnaise + Frank’s red hot sauce
  • 2 = Any pasta sauce (puree it, if it contains any chunky vegetables) + pinch black pepper powder
  • 3 = Tomato puree + mayonnaise + black pepper powder
  • 4 = One ingredient spread**

**If your low on ingredients to make a spread of its own, just go with one ingredient instead. The following works well: mayonnaise, pasta sauce, garlic spread, butter, or spread a bit of ketchup over it..any of the above would do the trick to use as a spread on the bread.

The toppings

Fresh veggies

For this recipe, cherry tomatoes, bell peppers, olives and red/purple onions are the vegetables I went with. I like the flavours it creates so I always stick with these toppings. It is part pizza so you can pick out anything you like and go crazy on the toppings. The flavour will amaze you. Just chop it all small and mix it together with a pinch of salt and pepper.

The secret ingredient – Do you really want to know? There is this one ingredient I use often on this dish and that is … DRUMROLL … the Thai Chillies. Any chilli would work just fine but I love thai chillies so I always have a bunch ready for my everyday meal. I add 1, 2 or even 3 chillies depending on how many I’m making. Just chop it finely and mix it with the rest of the toppings.

Warning: Thai chillies are very spicy so careful when using it. If you decide not to use it, it is still fine but it does make a difference to your taste palate. So start with just 1 chilli and if you like it go ahead and use as many as you can handle. The spice flavour will make you want even more.

the Cheese

The last thing we will be needed is the cheese. Any cheese would be fine. I’ve tried with Mozzarella, Cheddar, Havarti, and this time using Goat cheese. The cheese can be as little or more as you like.

Ingredients

  • 1 loaf French baguette bread cut to an angle
  • 1 Bell pepper chopped
  • 15-20 Cherry tomatoes chopped
  • 10 Olives chopped
  • 1 medium-size Red/purple onions chopped
  • 1 chillie pepper optional chopped finely
  • Salt as needed
  • Black pepper powder as needed
  • soft Goat cheese
  • 1/2 cup Spread** as needed

Instructions

The Spread**

  1. I make my spread depending on what’s in the kitchen. Take a look below to see what works best for you. Prep the spread and set it aside.
  2. Spread 1 = Mayonnaise + pinch chilli powder + Frank’s red hot sauce

    Spread 2 = Any pasta sauce (puree it if it contains any chunky vegetables) + pinch black pepper powder

    Spread 3 = Tomato puree + mayonnaise + black pepper powder

    Spread 4 = One ingredient spread***

The Toppings

  1. I used green bell pepper, red cherry tomatoes, olives, and onions. Cut them into small cubes or simply chop it small then mix it all together adding a pinch of salt and black pepper powder. Add finely chopped thai chillies (optional) and give it a good mix then set it aside.

The Bread

  1. If you like smaller round shape in bite-size. Slice the baguette using a serrated knife crosswise to achieve small circular shape pieces. For this recipe, I had the bread sliced into a slight angle to create a much wider surface space to work with. Cut the baguette as you wish and set it aside for now.

Assemble

  1. Preheat the oven to 325’F. Keep a baking sheet near-by and start to assemble them all together.

  2. Take a piece of baguette, spread a thin layer of the spread, spoon a generous amount of the toppings, then top it with cheese. Continue to do the rest of the baguette the same and line it on the baking sheet.
  3. Bake for about 10min. I like to keep mine another few more minutes so the bread comes out extra crispy and still soft in the middle.
  4. Serve while it is still warm, taste great when cold too.
