Herb & garlic-seasoned smashed fingerling potatoes that are air fried to an ultra-crisp texture. Tastes so irresistible, that half of them may not even make it to the dinner table.
On medium/high heat, boil the potatoes in a pot of water with a tbsp of salt.
Boil for about 20 minutes or until it is soft when forked.
Strain the water and set aside the potatoes for 2 minutes to cool down.
In a separate bowl, add the olive oil, dried parsley, garlic, chilli powder, black pepper powder, and salt.
Mix the ingredients together to make herb & garlic seasonings for the potatoes.
Use 1/3 of the herb & garlic seasoning to flavour the boiled fingerling potatoes.
Use a large fork, a potato masher, or the back of a glass to gently squish the seasoned fingerling potatoes until it smashes. Make sure to smash just enough to keep it all in one piece.
Use the rest of the herb & garlic seasoning to brush over the fingerling potatoes again.
Sprinkle sea salt for a touch of extra flavour.
Place the herb & garlic seasoned fingerling potatoes in the ninja basket over the grill.
Choose the air fry setting, set to temperature 375'F for only 10 minutes to crip.
Check half way to switch the potatoes around carefully not to break them. Increase the timer to air fry more if potatoes needed more crisp texture.
Remove from the basket when done to serve while its still warm and crispy.
