We love chili and make them often for dinner. Especially the one-pot chili recipe. It’s the kind of comfort food any Canadian would go for to escape the winter and to enjoy a heartwarming meal.
With only a few essential ingredients in hand, you can create the best tasting chili in just one pot stovetop. A steaming bowl of this chili will surely satisfy your food cravings as well as your hunger. You will come back for a second round with a meal like this.
The winter season in Canada is finally coming to an end and spring is gonna be starting very soon. Which means the weather can get erratic these days.
If you don’t already know, the Canadian weather can get unpredictable in between the seasons. It’s like one day it’s freezing cold/windy, the next day it’s sunny as if it’s the end of spring
Luckily this weekend, we feel a lot better and our taste buds are back and we are all looking forward to having a tasty meal together.
I was planning to catch up with the pile of work I kept putting off too. So that gives me very little time to cook for the day. I needed something easy to make and less time to prep, at the same time something delicious to satisfy our food craving.
After a serious debate between the four of us, we finally all agreed on making our popular one-pot chili.
How It’s Made
One-Pot Chili is a delicious meal to have whether it is for lunch, dinner or even for breakfast. It’s a simple stew containing ground meat, beans, chunky tomatoes, and broth.
Along with the ingredients, a few vegetables can be added for additional flavouring. Season it just right and you got yourself a hearty healthy meal for the day.
It is a heavy dish but fully satisfying if made right.
I have made chili many ways before but the one-pot trick comes in handy on days like today. On this recipe, I used two kinds of beans along with a tomato-based veggie sauce instead of using chunky vegetables, broth and tomatoes separately. Try it yourself. It’s super tasty.
One-Pot Chili – An easy to make comfort food
This easy to prepare one-pot chili makes the kind of comfort food we need on a cold winter season. Super simple to make, using fewer essential ingredients and spices to balance the flavours to satisfy your cravings.
Ingredients
- 1 can Kidney beans
- 1 can Black beans optional
- 1 bottel Catelli Garden Selection -Parmesan & Romano
- 1-2 cups Water
- 1 lb Ground meat (about 2 cups)
- ½ tsp Salt or as needed
- 1 tsp Black pepper powder
- 1/2 tsp Roasted curry powder optional
- 1/2 tsp Chilli powder optional
- 1/2 tsp Garlic powder optional
- 1/3 cup Havarti cheese or any other cheese optional
Instructions

On a medium/high heat, use a large deep skillet or a pot to cook the ground meat first. No oil is necessary.

While cooking the meat, continue to stir and break the chunkier meat into smaller size by using a wooden spoon. I mostly use my hand blender for jobs like this one. Easy to use it right from the pot and with just a few blends here and there I have all my ground meat broken into smaller pieces. Once you are satisfied with the sizes of the meat and there are no pink spots left, you may move on to the next step on adding the seasoning.

Start with the black pepper, then roasted curry powder, chilli powder, and then the garlic powder. Combine the ground meat well with the seasoning then throw in both the beans. Make sure you lightly wash the beans and drain them well before adding to the chili.

Next, pour in the Garden selection tomato sauce to the pot along with a cup or 2 of water depending on how thick or runny you prefer the chili to consist. Don't forget to add the salt as needed.

Now cook the chili for about 20 to 30m on medium/low heat with the lid on. When done check the beans to see if it is cooked enough. My kids like it well done so I let it cook until the beans are very soft. Mix well, add more salt and black pepper powder if needed to balance the flavours. If all is well take off from the stove and plate it for serving.

You can either add the cheese to the pot, mix and let it melt in the chili or sprinkle the cheese over a bowl of chili and place some cilantro on top for presentation right before serving. Whichever way you choose to serve it taste just right.

Serve while warm with a slice of garlic bread on the side.
NOTES
Chilli – Chili is a stew that is made using ground meat, one or two types of beans, chunky tomatoes, and broth. Some like having vegetables for added health benefits. A chili seasoning mix is also blended in order to balance the flavours to make a bowl of chili. Some use sugar, vinegar and even beer for added flavours. but besides the spices and the essential ingredients, there is no right or wrong way to make a good chili. With that said, you should feel free to play with the ingredients and flavours to satisfy your cravings. Make your own signature chili and see how you like it.
Beans – This one-pot chili recipe uses black beans and kidney beans that come in cans. If using dry beans, you’ll have to soak them in water overnight for best result. Besides these two types of beans, you may also pick pinto, lima, black, navy, and the northern beans as well.
Tomato – I normally use Catelli Garden Selections. They have a variety of choices to choose from and easy to use right off the bottle. Some even have chunky vegetables and tomatoes in them. My kids are picky so I had to use the parmesan & romano but feel free to use any of the other selections they offer. If you prefer using fresh vegetables and
Water – I stick with a cup or 2 of water but it is all on what consistency you’re going for. Some like there chili thick, some go for a much thinner consistency so if you think it’s too thick at the end don’t be afraid to add water and let it boil before serving. If the chili ended up too thin like water, remove the excess liquid if possible or all you have to do is let it boil and the chili will thicken as you cook.
Spice – This one-pot chili has a hint of spice but if you like to avoid the spice all together just omit the chili powder, curry powder, and go easy on the black pepper powder.
At times I also use the Club House – Chili Seasoning Mix instead of my own spices. The store-bought seasoning comes in 35g a pack.
Vegetables – You may use a variety of vegetables to add to this one-pot chili. My kids are picky so I went with the essential ingredients. However, for better health benefits and flavors, use diced onions when cooking the ground meat. You may also use chunky tomatoes, diced carrots, celeries, bell peppers, corn, even zucchini, and squash. Add the vegetables along with the beans when cooking.
Cheese – It is an option to add cheese not a must but cheese makes everything taste soo great. If I had a lot of cheese I’d add it to the pot just before taking off the stove. The cheese will melt and blend well with the chili. This way every bite you take will have the flavor infused. If not sprinkle the cheese over the bowl just before serving. Havarti is the best but you may go with other cheeses like mozzarella or cheddar as well.
