No-Cook & No-Bake

Yes, it’s true… There is so cooking or baking involved. All you’d need is a dough mixer, if not just knead it. It’s that simple I promise.

Only 3 Ingredients

All you need are the 3 main ingredients. Shredded coconuts, condensed milk, and icing sugar. Mix it all together and voila!

It is mainly those 3 ingredients but to enhance the flavour I also add flavouring essence plus to improve the look, food colouring.

5 Min To Prepare

Coconut Ice can be prepared in under 5 minutes. Gather all the ingredients. Use the dough mixer to combine it all and It’s ready.

You could serve as part of a dessert or let it set completely so you can cut it up into small bars and enjoy it.

Coconut Ice – 3 Ingr, 5 min to Prep, No-Cook, No-Bake Recipe

A rewarding treat to satisfy your sugar cravings especially the coconut lovers. Quick & easy to prepare coconut ice. No cooking or baking involved.

Servings 50 square pieces (size vary)

Ingredients

  • 3.5 cups Unsweetened Desiccated Coconut
  • 1 can Sweetened Condensed Milk
  • 3 cups Icing Sugar
  • ½ tsp Almond Extract optional
  • 2-3 drops Food Colour optional

Instructions

  1. Begin by lining the parchment papers inside a deep square baking tray or a freezer-friendly container and set it aside.

  2. Either by kneading or using a dough mixer. Use a deep enough bowl to combine the shredded coconuts, condensed milk and the icing sugar. Add the almond extract as well if adding. Knead and mix everything well.

  3. For this recipe, I am using 2 colours. So first, divide the coconut mix portion. The first portion will be left as white. Pour the first half portion and flatten it in the parchment-covered tray.

  4. Use the 2nd half portion to mix in the food colouring of your choice. Mix the colour with the coconuts. When ready pour it on top of the first flattened portion of the coconut.

  5. Flatten the coloured coconut well and smooth out the top. When done, cover it with the cling wraps and let it set in the freezer for about an hour or two. For best results leave it in the refrigerator overnight.

  6. When ready to serve, take the coconut ice along with the parchment paper out of the tray. Cut into the desired size or shape and serve.

Note

Colours – Use different colours to layer the coconut mixture to get a unique look. For example: Red and green for Christmas. Red and white for Canada Day. Orange and black for Halloween. Red, pink, and white for Valentine’s Day and etc.

Shaping – Coconut ice is usually made into squares because it is easier to cut when it is set in the freezer for hours. Besides square, try oval or circle shapes.

If you choose to do circle or oval, you must do the shaping before you set them in the freezer. (Once you are done with kneading the ingredients. Shape them into little circles, line them on the tray, cover and freeze as mentioned on the recipe. You may serve as it is or make it fancy by covering a layer of chocolate over the coconut and set it before serving them to your guests.

Flavours – Beside almond extract, you may use vanilla, chocolate (1/4c. Cocoa + 2 tbsp milk), or mint (green colour + peppermint essence). Feel free to play with other flavours to match the occasion.

Storing – Refrigerate coconut ice for up to a week as long as they are kept in an air-tight container. You may also freeze coconut ice for up to 2-3 weeks in an airtight freezer-safe container.

One last thing…

Storing for a longer time -The taste and quality of the coconut will get duller the longer it is in the freezer. It can also trigger certain health risks with spoiled food. So always remember to handle and practise food safety.
