Cucumbers are an amazing vegetable… actually, it’s a fruit commonly known as a vegetable.

They are so exhilarating due to the high water content, nutritious and it’s so versatile, it can be used in so many ways.

One of the best ways to utilize a fresh cucumber is to eat it raw. Turn it into cucumber water or a juice, pair it with other delicious fruits, mix it up into a fresh salad, make dips, dressings, use it on sandwiches and more.

The best way I enjoy cucumbers is when I turn it into a sambal. A side that pairs so well with rice. I always remember to serve this as a side for a refreshing touch to our meals. Especially when serving rice & curries, biriyani, and ghee rice.

This cucumber sambal is super simple to make. No need to sweat. Made easily under just 5min. With only 5 ingr. The best part is no cooking involved. Try this easy recipe and enjoy it with your meal.

How It’s Made

There is no secret really. This easy sambal only requires 5 more ingredients you may already have in your kitchen. Besides cucumber, we’ll need onions, chilli, black pepper, salt and a squeeze of lime. That’s all to it.

Notes
  • Cucumbers – Any type of cucumbers would do just fine for this recipe. If you don’t like the seeds, no worries, simply discard them and continue with the recipe.
  • Onions – Shallots are the best onions to go with, if not red or even purple onions are great. If you had none you may go with just about any onions.
  • Chilli – I love thai chillies, the heat of the chilli works great with cucumbers but any chilli would do just fine. Add 1, 2 or even 3 if you love the heat.
  • Salt and Black pepper – This 2 ingr. are a must even if you didn’t have the lime. The salt and black pepper give the right kind of flavour needed to make this sambal. Add as much black pepper as you like.
  • Prepping ahead – Never prep this sambal ahead of time. Make them just before you serve your meal. The reason is that when you make it ahead of time it will slowly start to water leaving a puddle of it on the bottom of the dish. Some like the cucumber water but some prefer it dry. If you really HAVE to prep it ahead. Have the cucumbers, onions, and chilli cut and ready but add the salt and pepper just before serving for best result.

Cucumber Sambal – Recipe Made In 5 Minute

Ingredients

  • 1 Cucumber
  • 1-2 small Green chillies
  • 2 Shallots or 1/4 small-size Onion
  • 1/2 tsp Black pepper powder
  • Salt as needed
  • Lime squeeze
  • 1/2 tsp Chilli flakes optional

Instructions

  1. Wash the cucumber. Cut off both ends and discard. 

  2. Use a peeler to carefully slice the cucumber lengthwise all the way down into long thin ribbons. You may also use the peeler to slice them thinly from the ends for shorter thin ribbons.

  3. Next, chop or slice both the onion and the chillies. Combine them with the cucumber. Add the black pepper and salt too. You may also add the chilli flakes for extra flavours. Squeeze a few drops of lime and give it a good mix. 

  4. Viola, it is ready to be served. This side can be served with rice and curries, ghee rice, and also great for biriyani.
