Pastry - A Srilankan Short-eats

The crispy layers you get after baking..stuffed inside with something amazing. This savoury puff pastry tastes marvellous, easy fix, and so delicious

Ingredients

  • Olive oil
  • a medium size Onion sliced thinly
  • 1/3 cup Tomato diced
  • few Curry leaves
  • 1/2 tsp Turmeric powder
  • 2 cups Green leeks sliced thinly
  • 3 170 g ea. Clover Leaf Chunk light tuna
  • Salt
  • Black pepper
  • Chilli flakes Opt
  • Chilli powder Opt
  • 2 Minar Puff Pastry Sheet Pack 10 sheets in each pack
  • 1 Egg beaten for brushing

Instructions

  1. Thaw the Puff Pastry sheets at room temperature for about 1-2 hours.


  2. On medium heat, add curry leaves and enough oil to cook the sliced onions and diced tomatoes.


  3. Cook with the lids on for about 5 minutes then take off the lid and stir.


  4. If the sambal starts to burn the pan or dry out, add little oil as you go only if necessary.


  5. Next, lower the heat and add the turmeric powder and thinly sliced green leeks.


  6. Continue cooking for 2 minutes then stir once then throw in the tuna and salt to the saucepan as well.


  7. Stir without breaking the tuna too much. Cook with lids closed for no more than 3 minutes.


  8. Add black pepper and salt for your taste preferences.


  9. NOTE - It is done and ready for next step or seal it closed and refrigerate for later use.


  10. If you like it spicy like I do, you may add chilli flakes or chilli powder. If not, more of the black pepper as to your spice needs.


  11. Carefully take off one pastry sheet at a time and put about a tablespoon of fillings in the middle and close one corner to the opposite side. To make it look like a triangle.


  12. Close the ends, if some areas of the sides won't close, no worries as long as the two opposite corner ends are closed well it should be good.


  13. Line them all on a baking sheet covered with parchment paper.


  14. Use the beaten egg to brush over the prepared pastries.


  15. Bake in a preheated oven at 200 Celsius (400 Fahrenheit) for about 15 to 20 minutes.


  16. Serve while it's still warm. It will get crispier as the warmness disappears. Leftovers can be refrigerated for the next day but it won't be as fresh.
