What do you guys think of savoury puff pastries… These pastries are a Srilankan delicious short-eats.

Who doesn’t like pastries right… whether it is sweet or savoury, anything made with puff tastes great.

Pasticceria Gelateria Italiana Ltd. This is a pastry shop we stumbled upon in Preston St, Ottawa. They had some delicious and beautiful pastries and pies.

Pastries can be prepared for breakfast as a buttery croissant, or make pot pies for lunch or dinner. They do come in handy when needed of a sweet treat for dessert or make savoury bites for an appetizer. It depends on what you bake it into.

Most pastries I’ve had here in Canada are all sweet treats. However what I crave time to time is a savoury bite. As we Srilankans love having our short-eats I do miss those stuffed puff pastries.

In Srilanka, I have eaten many many pastries whenever I happen to be there. This delicious short-eats is sold in the streets of Srilanka. People will buy as they walk on the roadside stalls and carts. Also served at restaurants and even when visiting a close relative, I remember them serving this delicious thing.

Making puff pastry isn’t easy for many, including me. I always go with store-bought pastry sheets. However, with only a few ingredients you can easily prepare a dough, but it’s the folding and rolling part of the making that takes extra time and effort into completing it to the end. Making this dough from scratch takes time and patience. It will be worth all the work you did on the dough when baking it. The puffiness is all in how many times you fold and roll. When baking, the layers will do it’s magic to bring out the puffiness and the crispiness needed for a perfect puff pastry.

I made these delicious crispy pastries a few times already this summer.
Although the pastry is store-bought the sambal is all from scratch. It was so good I thought It is time to share my secret stuffings with you. Actually, it isn’t a big secret, it is an easy thing to make.

HOW IT’S MADE

All we need is sliced onions, sliced green leeks, diced tomatoes, and the fish. With little spices and herbs added to season this sambal, there isn’t much else is needed to make this stuffing.

Use a saucepan and a lid to cook it in. On medium heat, cook using little oil, onions, tomatoes and curry leaves with the lid on. For about 5 minutes let is cook as is with the lid on then stir and add turmeric powder and green leeks to it. Lower the heat, If it starts to burn the pan or dry out, add little oil as you go if only necessary.

Once you add the green leaks remember to lower the heat. We don’t want the greens to get overcooked. So leave it for 2 minutes then stir once then throw in the fish and salt to the saucepan as well. Stir without breaking the tuna too much. Cook with lids closed for no more than 3 minutes.

If you like the filling to be spicy like I do, you may add chilli flakes or chilli powder, if not more of the black pepper as to your spice needs.

It is done now and ready for next step or it’s best to seal it close, then refrigerate for later use.

The next step is to thaw the frozen pastry sheets at room temperature for about an hour or two. Once thawed, carefully peel one sheet at a time, place the filling in the middle then fold one corner to the opposite corner creating a triangle shape. Place them all lined in the parchment covered baking sheet.

Separately beat an egg and brush it over the prepared pastries to get a golden finish. When done brushing, bake it in a pre-heated oven at 200 Celsius (400 Fahrenheit) for about 15 to 20 minutes.

Ingredients

  • Olive oil
  • a medium size Onion sliced thinly
  • 1/3 cup Tomato diced
  • few Curry leaves
  • 1/2 tsp Turmeric powder
  • 2 cups Green leeks sliced thinly
  • 3 170 g ea. Clover Leaf Chunk light tuna
  • Salt
  • Black pepper
  • Chilli flakes Opt
  • Chilli powder Opt
  • 2 Minar Puff Pastry Sheet Pack 10 sheets in each pack
  • 1 Egg beaten for brushing

Instructions

  1. Thaw the Puff Pastry sheets at room temperature for about 1-2 hours.


  2. On medium heat, add curry leaves and enough oil to cook the sliced onions and diced tomatoes.


  3. Cook with the lids on for about 5 minutes then take off the lid and stir.


  4. If the sambal starts to burn the pan or dry out, add little oil as you go only if necessary.


  5. Next, lower the heat and add the turmeric powder and thinly sliced green leeks.


  6. Continue cooking for 2 minutes then stir once then throw in the tuna and salt to the saucepan as well.


  7. Stir without breaking the tuna too much. Cook with lids closed for no more than 3 minutes.


  8. Add black pepper and salt for your taste preferences.


  9. NOTE - It is done and ready for next step or seal it closed and refrigerate for later use.


  10. If you like it spicy like I do, you may add chilli flakes or chilli powder. If not, more of the black pepper as to your spice needs.


  11. Carefully take off one pastry sheet at a time and put about a tablespoon of fillings in the middle and close one corner to the opposite side. To make it look like a triangle.


  12. Close the ends, if some areas of the sides won't close, no worries as long as the two opposite corner ends are closed well it should be good.


  13. Line them all on a baking sheet covered with parchment paper.


  14. Use the beaten egg to brush over the prepared pastries.


  15. Bake in a preheated oven at 200 Celsius (400 Fahrenheit) for about 15 to 20 minutes.


  16. Serve while it's still warm. It will get crispier as the warmness disappears. Leftovers can be refrigerated for the next day but it won't be as fresh.

I have never made the puff pastry dough from scratch ever before, I always used the store-bought puff pastry whenever I’m in need of a quick fix with a delicious result.

As many already love this tasty treat, I think I will give it a try making my own puff pastries dough one day. With just a few main ingredients I think I should be able to whip up a good pastry sheet. If all goes well I will post it here for you all to share.
