Do you love cookies? If so you will love these cookie bars that are loaded with chocolate chips and coconuts. The result is chunky soft and chewy with every bite. Simply delicious.

Cookies are a delicious heavenly snack for many, including my family, even though I am not as much into cookies as they are (Don’t ask why). I was craving treats that are loaded with coconuts instead. Like my all-time favourite, Coconut Ice, Coconut Toffee (post coming soon) or even the Samaposha.

Cookies aren’t really my thing but I wouldn’t mind enjoying a few. That very day both my kids ganged up together, came to ask me so KINDLY to make some cookies with a big smile.

With the way they asked and their unusually broad smile, I couldn’t resist but to agree to make them some cookies.

I knew right away that I was gonna give these cookies a delicious twist in flavours. My fam will love anything that comes out delicious from the kitchen so I went in with the confidence that I am gonna come out with a deliciously tasty treat in hand.

The result was chunky, chewy, and a soft middle with a crunchy top. I loved it! Tasted nothing like the original shaped cookies. It was different in flavours, texture and shape. I couldn’t resist having some more after the kids were off to bed. I really enjoyed the coconut and chocolate combination.

Give it a try. Great snack to treat yourself and to serve when friends or family come over. Especially the kids will go crazy over them.

Chocolate Chip Coconut Cookie Bars

To make a tasty cookie treat, It’s important to separate the wet and dry ingredients first. Mix them separately then put them together gradually on low beating speed to combine it all but not over mix them.

Next fold in the mini chocolate chips and my fav ingredient the coconuts, into the cookie dough for extra added flavours.

A trick I usually do when baking is to cover the baking pan with a large piece of parchment paper that hangs out from the sides. This helps with lifting up the baked goods along with the parchment paper without having to flip or having to make a mess in the kitchen. This mess-free solution always works well for me.

Finally, bake the cookie dough until they are done. The edges of the cookies will turn out slightly firm in light brown colour while the middle comes out soft and much lighter in shade.

Baking cookies in a pan instead of baking sheets will result in chunky, soft & chewy cookie bars that are super delicious. The best part of this cookie is that it is loaded with chocolates and coconuts that are hard to resist.

Soft & Chewy Chocolate Chip Coconut Cookie Bars

Who doesn’t love cookies? These cookie bars are loaded with chocolates and coconuts. The result is chunky soft, chewy and simply delicious.

Ingredients

  • 1/2 cup Unsalted butter at room temperature
  • 1/3 cup Granulated sugar
  • 1/2 cup Light Brown Sugar
  • 1 large Egg at room temperature
  • 1 tsp Vanilla essence
  • 1 & 1/2 cups All purpose flour
  • 1 tsp Baking soda
  • Pinch Salt
  • 2 cups semi-sweet Mni chocolate chips
  • 1 & 1/2 cups Desiccated coconut flakes sweet or unsweetened

Instructions

  1. Start by preheating the oven to 350’F (175’F). Prep a 9×9 square baking pan by covering it with parchment or aluminum foil and set aside.
  2. Next, use the kitchen-aid mixture or a hand-held beater to beat the butter, granulated sugar, and the brown sugar together until the brown sugar has no more lumps.
  3. Once it is beaten well, add the egg and the vanilla essence. The batter will look thicker.
  4. Next, on another bowl combine the flour, baking soda, and the salt together.
  5. On low beating speed, gradually mix the dry ingredients into the wet ingredients. Mix it lightly to avoid overmixing. The cookie dough will look thick.
  6. Lastly, fold in the mini chocolate chips along with the coconut flakes into the cookie dough. Combine it all well.
  7. Now transfer the cookie dough to the prepared square baking pan. Flatten the top into a smooth even layer. Bake for about 25-30 minutes.
  8. Next, set the kitchen timer to the minimum recommended time. When it’s time to check. Open the oven, pull out the oven rack and check the edges of the cookie, they should be turned into a light brown in colour. Also, do a toothpick check for doneness; Insert a wooden toothpick to the centre of the cookie until you reach the mid-point and remove to check if it comes out clean. If so the cookies are done. If it didn’t come out clean let it bake for another few more minutes. Keep a close eye to avoid burnt edges.
  9. When done, remove the pan from the oven. Let it cool in the baking pan for about 15-20 min before lifting the parchment paper from the side, along with the cookies, out to a cutting board. Cut the cookies into desired square sizes or shapes of your choice.

  10. Serve at any time and enjoy a delicious chocolate chip covered coconut loaded cookie bars.

Storing – Store in an air-tight container, at room temperature, for about a week.

Prep ahead – You may prep the cookie dough and let it chill in the fridge for about 2-3 days as long as they are sealed well in an air-tight container.
