It’s fluffy, soft, and easy to make. What’s not to love?
To add some extra love to your meal, top it with freshly cut fruits, whipped cream on top, powdered sugar dusted on top and complete it with your favourite syrup over the pancake for an over-the-top finish.
I make these easy pancakes on most of the weekends for our breakfast, a few times for lunch when we had the cravings… and also, my kids wouldn’t mind at all having these for dinner too. Trust me on this one…It is so yummy!

How to make pancakes fluffy and soft
Nowadays, you can easily find a box of pre-made pancake mix in any grocery store you visit. They often go on sale too, which is a sweet deal. However, it is never the same quality as the one you create in the comfort of your kitchen.
Pancakes are super easy to make. Families with kids will fall head-over-heels in love with a recipe like this one.
There are two ways you can create a fluffy pancake. There is the classic method, and then there is this fast method.
Classic method (detailed recipe instruction is below)
To create a very fluffy pancake, many follow the cake trick. Which is to separate the wet and sift the dry ingredients. Some of them must be at room temperature. The way the batter is mixed has a folding technique. This is done by mixing the wet ingredients into dry to create a smooth batter at the end.
The fast method (fluffy but not like the classic fluff pancakes)
Ingredients do not need prepping or softening. Grab a blender, add all the ingredients, whichever order you prefer, and hit the blend button.
Blend until it forms a batter. It will not be completely smooth, as the butter will form smaller lumps. Which is totally okay, trust me.
Even with a lumpy batter like this one, the pancake will still be fluff and soft when done.
Making it
Whether you approach the classic or the fast method, you will end up with a pancake batter ready for making.
Place a scoop of the pancake batter on a well-heated griddle, skillet or pan of your choice. Wait for the batter to settle into a circle. It will soon rise, and form air bubble pockets.
Take a quick peak on the bottom, as the bubbles start popping, to check if it has turned to a golden brown colour. If, so, it is time to flip the pancakes to have the other side cooked. Soon as that side is cooked to similar colour, take off the heat.
The classic trick is a real jewel, however, for those who need to create pancakes in a rush, I highly suggest the fast method. It works every time.

Easy Pancakes 🥞 | Quick Recipe To Make Fluffy and Soft Pancakes
Here is a quick and easy homemade recipe to make delicious fluffy pancakes. One of the sweetest way to start any day.
Ingredients
- 1 cup All-purpose flour
- 1/4 cup Granulated sugar
- 1 & 1/2 tbsp Baking powder
- 1/3 tsp Salt
- 1 cup 2% Milk warm but not boiled
- 3 tbsp Butter unsalted, at room temperature
- 1 large Egg at room temperature
- 1 tsp Vanilla extract
Instructions

First sift the dry ingredients (flour, sugar, baking powder, salt) together and set them aside.

In a separate bowl, beat the eggs first, add the butter, milk and vanilla to the egg and beat again.

Next, add the dry ingredients gradually into the wet ingredients. With a spatula, gently fold in the ingredients until it becomes a batter.

Heat the pan, skillet or griddle (375'F) of your choice over medium-high heat. When it is warm (to check, sprinkle water to hear it sizzle) spray or brush with cooking oil or butter.

Note – If pancakes are cooking faster for you to keep up, lower the heat to medium.

Next, add a scoop of pancake batter and wait for it to settle into a circular shape. It will soon start to fluff and form air bubble pockets.Â

Check on the bottom carefully, when bubbles start to pop, to see if it has turned to a light golden brown. If so, flip the pancake to cook the other side.

Take 1-2 min cook time on both sides and when done take the pancakes off the heat.

Note – If pancakes are too thick, you can thin it by adding little milk at a time to the pancake batter and mix until you get the right consistency to cook thinner pancakes.

Pancakes are one of our favourite weekend breakfast/brunch things. There is no right or wrong way to relish them. Stack it up, soak it in syrups, and enjoy them.

Create bite-size pancakes as party food
I created dollar-size pancakes for my kid’s birthday party a few years back. I staked a few, topped it with a piece of fruit, secured it in place with one of those fancy party toothpicks and had the syrup ready on the side to be served.
The guests loved it and it turned out to be a great hit.
For a fancier look, slice the fruit of your choice. Place it in between each pancake. Stack it up, top it with fruits if you prefer, syrup the rest and serve while it’s still warm and fresh.
