Carrots can be consumed in many ways. For example, baked it into a carrot cake. Grilled with other veggies on a summer BBQ evening or turn it into carrot juice. They just taste great whether it is in a stew or soup, boiled or steamed, served fresh or cooked.
The Carrot salad recipe is one of my go-to sides when serving rice. Kids enjoy it too (when it is without the spice). I can easily put it together to complete a meal. The dish is colourful, healthy, flavourful to be served in other ways besides rice. Try flatbread!

Honestly, this healthy carrot recipe is one of the easiest salads I’ve ever made. You can tell by the look of it that it doesn’t need complicated spices or difficult-to-find ingredients. Takes only 5 ingredients, ready within 5 minutes.
The five ingredients include the Thai green chillies, shallots, plain yogurt, black pepper powder and carrots. Salt is optional.
That’s all this salad requires.
The next main step is to cut and mix all the above ingredients in whichever order you like. It’s that easy.
Carrot Recipe Notes
- Shallots and the green chili can be optional but best to add for great taste result.
- Any green chili works fine but if you’re into the spicy heat flavour I’d recommend the Thai chili.
- Any onion type is fine too but I’d recommend the shallots for the best flavour results.
- You can replace yogurt with curd or mayonnaise for a quick fix.
- Adding salt is optional. This recipe tastes best as is.

5 ways to serve as a side dish

Carrots can be served in many ways both fresh or cooked. I have tasted carrots mostly as a side to these above meals.
The most famous style of serving this carrot salad is with biriyani of course! The yogurt in the salad helps cool things down when the meal is served spicy and steamy.
Thali usually comes with curd as one of the sides. Instead of serving the typical curd, add carrots to change it up. Makes the meal more colourful.
As with adding it as part of rice and curry meal. A Rice and curry meal consists of more than just curries to the rice. Adding colourful variety is one way to bring your rice and curry to life! So turn your boring carrots into a cooling salad.
This salad is great with flatbreads too. Naan for example. Garlic naan always wins the crowd. Best for kids lunch meals too. Remember to omit the green chili and/or the shallots when making it for kids.

Easy carrot salad Recipe ready in 5 min, takes 5 ingredients and serves in 5 ways.
Ingredients
- 2 Carrot Wash, peel & shred to desired size
- 2 Green chili Sliced thin
- 2 Shallot Sliced thin
- 1/3 tsp Black pepper powder or as need
- 3 tbsp 2% Plain yogurt
Instructions

Wash, peel & shred the carrots using a food grator. Slice the shallots and green chili into thin slices.

In a bowl, combine the shredded carrot, sliced shallots, and the sliced green chili with the black pepper powder and the yogurt.
