Vegan Coconut Ice Recipe

Ingredients
  

  • 3 cups Unsweetened desiccated coconut
  • 1 can Vegan sweetened condensed milk
  • 3 cups Icing sugar
  • ½ tsp Almond or vanilla extract optional
  • 2 drops Vegan‑friendly food coloring optional

Method
 

  1. Line a deep square baking tray or freezer‑friendly container with parchment paper.
  2. In a large bowl, combine desiccated coconut, vegan condensed milk, icing sugar, and extract (if using). Mix or knead until a soft dough forms.
  3. Divide the mixture into two portions. Leave one plain white.
  4. Add food coloring to the second portion and mix until evenly tinted.
  5. Press the white layer into the tray and flatten it evenly.
  6. Add the colored layer on top and press firmly to smooth the surface.
  7. Cover with cling wrap and freeze for 1–2 hours (or refrigerate overnight for best results).
  8. Remove from the tray, slice into squares, and serve.
