Lamprais Recipe (Assembly Guide)

A cozy Sri Lankan banana leaf meal packed with rice, curry, sambal, veggies, egg, and a crispy cutlet—all wrapped up and baked until everything turns smoky, soft, and full of flavour. Lamprais takes a little time, but it’s one of those dishes that’s totally worth the weekend effort.

Ingredients
  

  • Ghee rice
  • Thick curry chicken, beef, mutton, or veg
  • Sambal of choice
  • Stir‑fried veggies
  • Hard‑boiled egg
  • Fish cutlet
  • A veggie or meat deep fried
  • Banana leaves
  • Foil

Method
 

  1. Warm banana leaves oven heat until soft.
  2. Lay foil on the counter and place the warmed leaf on top.
  3. Add rice to the center.
  4. Place the egg, any fried sides and cutlet to the center
  5. Add curry, sambal, and veggies around the sides.
  6. Wrap the banana leaf covering the rice.
  7. Wrap again with foil.
  8. Bake at 400°F for 15–20 minutes.
  9. Rest 10 minutes before unwrapping.
