Kale Stir-Fry Recipe

Ingredients
  

  • A few curry leaves
  • 1 tbsp Cooking oil of your choice
  • 1 tsp Cumin powder
  • 1-2 Sun-dried red chili peppers
  • 1 tsp Garlic minced
  • 1/3 medium-size Onion
  • piece Pandan leaf optional
  • bunch Kale washed & thinly sliced
  • 1/3 cup Coconut either freshly shredded or store-bought frozen pack
  • ½ tsp Turmeric powder
  • 1-2 Green chilies sliced
  • 1 tbsp Maldives fish optional
  • pinch Salt
  • squeeze Lime juice

Method
 

Stir-Fry on stove-top
  1. Heat your oil in a pan over medium‑high heat.
  2. Add red chilies, curry leaves, and garlic. Let them sizzle for a few seconds.
  3. Add the onions and sauté until they soften.
  4. Toss in the kale, pandan leaf, cumin, turmeric, Maldives fish (if using), and salt. Stir for 1–2 minutes until the kale becomes tender‑crisp.
  5. Mix in the shredded coconut and green chilies. Stir for another minute until everything comes together.
  6. Finish with a squeeze of lime juice before serving.
