Stir-Fry on stove-top
- Heat your oil in a pan over medium‑high heat.
- Add red chilies, curry leaves, and garlic. Let them sizzle for a few seconds.
- Add the onions and sauté until they soften.
- Toss in the kale, pandan leaf, cumin, turmeric, Maldives fish (if using), and salt. Stir for 1–2 minutes until the kale becomes tender‑crisp.
- Mix in the shredded coconut and green chilies. Stir for another minute until everything comes together.
- Finish with a squeeze of lime juice before serving.
