Ingredients

  • 12 small Fingerling potatoes
  • 1 tbsp Olive oil
  • 1 tsp Chives
  • 1 tsp Parsley
  • 1/2 tsp Dill
  • 1 tbsp Garlic powder or freshly minced
  • 1 tsp Cayenne or chili powder
  • 1 tsp Onion powder
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper powder to taste

Method

  1. Place the fingerling potatoes in a pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and allow the potatoes to cool slightly.
  2. In a large bowl, combine the olive oil, chives, parsley, dill, garlic, cayenne pepper, onion powder, salt, and black pepper. Mix well.
  3. Place the boiled potatoes in the seasoning bowl. Toss gently until evenly coated.
  4. Transfer the potatoes to a parchment-lined air fryer basket. Using a fork or potato masher, gently press each potato to slightly flatten.
  5. Brush the remaining seasoning mixture over the potatoes.
  6. Air fry at 375°F (190°C) for 10-15 minutes. Flip halfway through cooking for even crisping. For extra crispiness, cook for an additional 3-5 minutes.
