Ingredients

  • 3 Drumsticks slice into 4-6 cm length
  • 1 tbsp Olive oil
  • 1/2 tsp Mustard seeds
  • 1/2 small Onion sliced
  • Curry leaves
  • 1/2 cup Tamarind water
  • 1 & 1/2 cup Water
  • 1 tsp Chilli powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1 Green chilli sliced
  • 1/4 cup Coconut milk
  • Salt as needed

Instructions

  1. First, wash the drumsticks and cut into a length of 4-6 cm. Peel a thin layer of the ridges off leaving the hard outer layer still intact.
  2. On medium-high heat, use a deep pot, pan, or a skillet to heat the oil first. Add mustard seed. Soon it will start sizzling then add the onions, curry leaves, and give it a mix.
  3. Once the onions soften add the tamarind water, chilli powder, turmeric powder, coriander powder, salt, cumin powder, green chilli slices, the drumstick pieces and the water.
  4. Cook for about 10 to 15 minutes. The water should be reduced by now and the drumstick must be softened. It takes time for the drumstick to cook well.

  5. Once it is cooked add the coconut milk and add more salt if needed. Let it cook for another 2 more minutes then take off the stove.
