Cauliflower Stir-Fry With Coconut – Anti-Inflammatory, High-Fiber Recipe in 15 Minutes

Ingredients
  

  • 1 tbsp Olive oil
  • 1 tsp Mustard seeds
  • few Curry leaves
  • 1 Sundried chili pepper
  • 1/2 head Cauliflower chopped
  • 1 tsp Ginger minced
  • 1 tsp Garlic minced
  • 1/2 medium Onion sliced
  • 1 Green chili sliced
  • 1/4 cup Coconut freshly flaked or frozen store-bought
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1/2 tsp Fennel powder
  • Salt as need

Method
 

  1. Heat oil over medium-high temperature, add curry leaves, sundried chili pepper, and mustard seeds to let them sizzle.
  2. Toss in the sliced onions, minced ginger and garlic. Cook until onions softens.
  3. Lower heat to add cumin, fennel, turmeric powder. Stir then add the green chilies and cauliflower. Continue cooking for about 5 minutes stiring often.
  4. Add coconut flakes and salt to season. Stir-fry for 3 minutes then remove from heat.
