Beetroot Curry Recipe

Ingredients
  

  • 1 medium Beetroots sliced thin
  • 1 tsp Turmeric powder
  • 1/4 medium Onion sliced thin
  • 1/4 medium Tomato diced
  • 1/4 cup Coconut milk
  • 1 Green chili optional
  • few Curry leaves optional
  • piece Pandan optional
  • Oil of your choice to cook
  • Salt as need

Method
 

  1. Peel beetroot skin, wash, and slice thin. Slice onions, chilies, and dice tomatoes.
  2. Combine beetroots, onions, tomatoes, chilies, curry leaves, pandan, turmeric, oil, and salt in a pot.
  3. Cook on medium heat for 10–15 minutes, stirring occasionally.
  4. Stir in coconut milk and let simmer on low heat for 5–8 minutes.
