Air-Fry Eggplant | Easy Recipe and Its Health Benefits

Ingredients

To Air-Fry

  • 2 Eggplants
  • pinch Salt or as needneeded
  • 1/2 tsp Turmeric powder
  • 1/2 tbsp Cooking oil of your choice

To Stir-Fry

  • 1 tsp Cooking oil of your choice
  • 1 Sun-dried red chili pepper
  • 1/2 tsp Mustard seeds
  • few Curry leaves
  • 1/3 Onion diced small
  • 1/4 Tomato diced small
  • 2 Green chilli pepper thai chillies
  • 1/2 Bell pepper diced small
  • 1/2 tsp Chili powder Kashmiri brands
  • 1/2 tsp Chili flakes
  • Salt to taste
  • Air-fried eggplants
  • 1/2 fresh Lime juice
  • 1/4 cup 2% Milk or Coconut milk

Instructions

  1. Wash, dry, and cut the eggplants in half. Then take each piece to split it lengthwise in half. Repeat splitting each piece until you reach a size and a shape of a french fry.

First air-fry

  1. To air-fry, combine the diced eggplants in salt, oil and turmeric powder.

  2. Place the seasoned eggplant pieces in the air fryer basket.

  3. Set it to air-fry at 375'F for 10-12 minutes or until the eggplants turn crispier.

Then stir-fry

  1. In the meantime, place a saucepan or a wok on the stovetop. Turn the heat to medium/high and start adding the other ingredients.

  2. Start with heating cooking oil of your choice. Add sun-dried red chili pepper, mustard seeds and curry leaves.

  3. When the ingredients starts to splutter, add and sauté the onions. Then add the tomatoes and mix. Next, the bell pepper and green chillies.

  4. Sauté for a few seconds, then, add the spices to season the dish. Combine chili powder, chili flakes, and salt to taste.

  5. Sauté for a few more seconds, add the air-fried eggplants. Mix then pour the milk to let it warm up but don't let the dish boil. Add lime juice towards the very end.

  6. Taste test to adjust the flavour with salt and lime. Add more spices if needed.

  7. When done serve with your favourite meal.
