Air-Fried Okra Sambal (Bandakka/ Vendakkai) – Sri Lankan Vegan Recipe

A zesty, spicy side dish that transforms okra into a crunchy, crave-worthy delight.

Ingredients
  

  • 12 Okra
  • 1 tbsp Oil of your choice
  • 1/2 tsp Turmeric powder
  • 2 Pearl onions sliced thin
  • 1/4 medium Tomato diced small
  • 2 Thai green chili sliced thin
  • 1/2 tsp chili flakes or chili powder optional
  • 1/4 cup Coconut or whole milk
  • 1/2 tsp Salt
  • 1/2 Lime

Method
 

  1. Wash and slice the okra, then toss it in oil, turmeric powder, and salt.
  2. Air fry at 375°F for 12–15 minutes (or deep fry until crisp).
  3. Place the air-fried okra in a bowl, combine the onions, tomatoes, and green chilies.
  4. Add chili flakes or chili powder to increase spice-level.
  5. Pour milk, little or more based on your preference.
  6. Mix everything together. Adjust overall flavor with salt and lime.

Flavor Tip: Use fresh okra and fry in small batches for the crispiest results
