Sri Lankan Pumpkin Curry | Easy Vegan Recipe

If pumpkin means pies, soups, and autumn baking to you, you’re not alone. In Sri Lanka, however, pumpkin often ends up in savoury dishes, and pumpkin curry is one of the simplest examples.

The combination of pumpkin, coconut milk, and spices creates a balance of sweetness and warmth that’s difficult to stop going back for. It doesn’t require a long list of ingredients, and it isn’t the sort of recipe that needs to be measured perfectly every single time.

Beyond the flavour, pumpkin is one of those ingredients I always appreciate having in the kitchen. It’s budget-friendly, versatile, and an easy way to add more vegetables to a meal.

It’s also one of the easiest ways to bring a little Sri Lankan flavour into your kitchen without needing any hard-to-find ingredients.

Sri Lankan Pumpkin Curry

A simple Sri Lankan pumpkin curry made with fresh pumpkin, coconut milk, and aromatic spices. Perfect served with rice or as part of a traditional rice and curry meal.
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings: 4 servings
Course: Side Dish
Cuisine: Sri Lankan
Calories: 80

Ingredients

  • 1 tablespoons coconut oil
  • 1/2 medium onion diced
  • 2 cloves fresh garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon chili powder Kashmiri
  • 2 cups pumpkin peeled and cut into cubes
  • 1/2 cup water or vegetable broth
  • 2 tablespoon coconut milk powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper optional
  • 1 sprig curry leaves

Method

Step 1: Start with the Aromatics
  1. Heat the coconut oil in a large pot over medium heat.
  2. Add curry leaves, mustard seeds, and sundried red chili pepper to sizzle.
  3. Add the diced onion and cook until softened, about 4 to 5 minutes.
  4. Stir in the garlic and ginger and cook for another minute until fragrant.
Step 2: Add the Spices
  1. Add the curry powder, turmeric, cumin, and chili powder if using.
  2. Stir everything together for about 30 seconds so the spices become fragrant and coat the onions.
Step 3: Cook the Pumpkin
  1. Add the pumpkin cubes and give everything a good stir so the pieces are coated with the spices.
  2. Pour in the water or vegetable broth and bring the mixture to a gentle simmer.
  3. Cover the pot and let it cook for 15 to 20 minutes, stirring occasionally.
  4. Recipe note: The pumpkin should become soft enough to pierce easily with a fork. Don’t worry if some of the smaller pieces start breaking apart. That’s exactly what helps create the thick gravy.
Step 4: Add the Coconut Milk
  1. Once the pumpkin is tender, reduce the heat to low and stir in the coconut milk.
  2. Let the curry warm through for another 2 to 3 minutes.
  3. I try not to let it boil after adding the coconut milk. A gentle heat is all it needs.
Step 5: Season and Serve
  1. Finish with salt, black pepper, and remove from heat to serve.

Ways to Adapt

  • Add Chickpeas – If you’d like extra protein, stir in a can of drained chickpeas during the last few minutes of cooking.
  • Add Lentils – Cooked red lentils blend beautifully into the gravy and make the curry more filling.
  • Add Tofu – Pan-fried or baked tofu works surprisingly well alongside the pumpkin.
  • Add More Vegetables – Spinach, green beans, sweet potatoes, or cauliflower can all be added depending on what you have on hand.

What to Serve with Pumpkin Curry

At my table, pumpkin curry is usually served alongside a few simple side dishes, making it part of a complete rice and curry spread.

I often see this vegan curry served in ‘Thali’, a South Indian mea,l or inside a Sri Lankan lampraise meal.

Here are some of the dishes that go well with this pumpkin curry, if served alongside rice:

Got leftovers?

  • In the Refrigerator
Store any leftovers in an airtight container for up to 3 days.
  • In the Freezer
This curry freezes well for up to 2 months.
  • Reheating
Warm it gently on the stovetop or in the microwave. If the curry has thickened too much, add a splash of water and stir.

Frequently Asked Questions

Everything you need to know about the pumpkin curry. Can’t find an answer? Get in touch from the comments section below.

Can I use butternut squash instead of pumpkin?

Yes. Butternut squash works just as great and creates a similar texture and flavour.

Is this curry spicy?

Not particularly. The recipe is mild, but you can increase the chili powder or add extra black pepper powder if you’d like more heat.

Can I make it ahead of time?

Absolutely. In fact, the flavours tend to develop further overnight.

Do I need to blend the curry?

No. The pumpkin naturally softens as it cooks. Some pieces break down and thicken the gravy while others remain intact.

Can I freeze pumpkin curry?

Yes. Allow it to cool completely before freezing in airtight containers.

Final Thoughts

There is nothing complicated about this Sri Lankan pumpkin curry, and that’s exactly why I like it.

It’s made with everyday ingredients, comes together in one pot, and doesn’t ask for much effort. The pumpkin becomes soft and flavourful, the spices bring everything together, and the coconut milk ties it all into a smooth gravy that’s perfect with rice.

Some recipes are saved for special occasions. This isn’t one of them.

It’s the sort of everyday dish that appears on countless Sri Lankan tables, often alongside rice and a few simple curries.

This is the kind of curry that quietly becomes part of the regular meal rotation, and once you’ve made it a few times, you’ll probably find yourself making it from memory.
