This salad has been around my whole life, but I never cared for it as a kid, I mainly reached out for the cutlets instead. But goin from an island-life to living the country-life does change the way you see food.

lately, I kept seeing this same salad at restaurants, and like flash… the taste brought back so much of flooding memories of my island-life.

So this weekend, when I made ghee rice with deviled fish, lentil curry, and eggs, I needed something refreshing to complete the meal. And here comes a salad version that fits my island-taste perfectly, but honestly? Adjust it however you want. That’s the best part: no cooking, no rules, just chop, mix, and vibe.

Go spicier.
Go heavy on the pineapple.
Swap in mango if that’s what you’ve got.

Cucumber Pineapple Salad Recipe

A fresh Sri Lankan cucumber pineapple salad made with diced veggies and tropical fruit. Perfect with biriyani, rice plates, and summer meals.
Prep Time 20 minutes

Ingredients
  

  • 2 small baby cucumber diced small
  • 1 medium-size red onion diced small
  • 1/3 medium-size tomato diced small
  • 1 slice pineapple or half a mango diced small
  • pinch Salt to taste
  • pinch Black pepper to taste
  • 1 Green chilies sliced -optional
  • Lime juice squeeze
  • pinch sugar

Method
 

  1. Dice the cucumber, tomato, onion, and pineapple into small, even pieces. Add salt and pepper to taste. Toss everything together and let it sit for 5–10 minutes so the flavors come together (optional). Serve cold or at room temperature.
